Kuwombera mpunga wa phala la Thai ku Thai. D.Schmidt Kuti ndipeze tsamba limodzi la mapepala awa , onani: Chikho cha Pad Thai Recipe , OR kuti chikhale chosavuta, onani: Chophika Chokha Chakudya Chakudya cha Chikuku .
Khwerero 1: Kutentha madzi mumphika mpaka mutatsala pang'ono kuwira. Chotsani kutentha ndi kumiza mchele Zakudyazi. Lolani kukhala pansi pamene mukukonzekera zina.
INGREDIENTS: (AMATHANDIZA 2-3)
- 8-10 oz. Mtundu wa Thai mpunga mpunga (kapena zokwanira 2-3 anthu)
- 1 mpaka 1 1/2 makapu nkhuku yaiwisi kapena chifuwa nyama, sliced
- 4 cloves adyo, minced
- 2 tsp. chimanga
- 2 Tbsp. msuzi wa soya
- 3 makapu atsopano nyemba zimamera
- Zosankha: mazira awiri
- 3 kasupe (wobiriwira) anyezi, sliced
- pafupifupi. 1 chikho mwatsopano coriander
- 1/3 chikho chophwanyidwa kapena chodula (kapena mtedza wina, monga cashews)
- 1/2 chikho nkhuku katundu
- 1/4 tsp. tsabola watsopano wakuda
SAUCE:
- 3/4 Tbsp. phala la tamarind (likupezeka m'masitolo a ku Asia / Indian)
- 2 Tbsp. nsomba msuzi
- 1-3 tsp. chili cha msuzi (malingana ndi zokometsera zomwe mukuzifuna)
- 2 - 3 Tbsp. shuga wofiira (zocheperapo kulawa)

"Yambani" nkhuku
Pano pali marinade ofulumira kwambiri ku Asia omwe mungagwiritse ntchito ndi ntchentche. Ikani 2-3 Tbsp. Msuzi wa soya mu chikho (agwiritsireni ntchito 3 Tbsp kwa makapu 1 1/2 wophika nkhuku, kapena 2 Tbsp kwa chikho chimodzi cha nkhuku). Onjezani 2 tsp. cornstarch ndi kusonkhezera mpaka cornstarch dissolves. Tsopano tsanulirani chisakanizo pa nkhuku yodulidwa. Muziganiza kuti muphatikize. Pangani Msuzi wa Pad Thai.
Kuti mupange msuzi wa Pad Thai, yambani ndi phala la tamarind. Sakanizani pafupifupi. 3/4 Tbsp. za chiguduli chakuda ichi mu chikho. Onjezerani 1/4 chikho madzi ndikugwedeza mpaka phala litasungunuka m'madzi (limathandiza ngati mumagwiritsa ntchito madzi ofunda).Kuwonjezera Tamarind Paste. D.Schmidt Tsopano yikani 2 Tbsp. nsomba msuzi, 1-3 tsp. kapena msuzi wofiira wambiri wofiira, malingana ndi momwe mumafunira zokometsera , ndi 2 1/2 mpaka 3 Tbsp. shuga wofiira.
Zindikirani: Izi zingawoneke ngati shuga wambiri, koma mukufunikira kuti mukhale wovuta kwambiri. Izi ndizomene zimapangitsa Pad Thai kukoma kwambiri!
Ngati simukudziwa kuti shuga angagwiritse ntchito bwanji, kulawa-yesani msuzi - zindikirani kuti zidzakhala zolimba kwambiri pa nthawi iyi (kukoma kudzakhala "kuthirira pansi" pamene mugawanika mankhwalawa). Ikani msuzi pafupi ndi chitofu kuti mugwiritse ntchito patapita nthawi.

Ikani lalikulu (lakuya) kutsitsa poto kapena wok wokwera pakati-kutentha kwakukulu. Pamene wok / poto ndi yotentha, yikani 1-2 Tbsp. mafuta komanso adyodi adyo (4 cloves). Onetsetsani-mwachangu mpaka kununkhira (masekondi 30 mpaka 1 miniti).Kukuza nkhuku. D.Schmidt Onjezani nkhuku (pamodzi ndi marinade). Tsopano yambani kuwonjezera zina za nkhuku. Onjezani Tbsp pang'ono chabe. pa nthawi, zokwanira kuti nkhuku ipume bwino. Pitirizani kuyambitsa-kutentha ndi kuwonjezera katundu mpaka nkhuku zonse (1/2 chikho) zigwiritsidwe ntchito ndipo nkhuku / mapepala amaphika (pafupi mphindi zisanu ndi zisanu ndi zisanu ndi zitatu).

Pogwiritsira ntchito spatulas, zikho zamatabwa, kapena ziwiya zina, muthamangire mwamsanga zitsamba. Gwiritsani ntchito njira ya "kutukula ndi kutembenuka" (ngati kuti mukuponya saladi) mmalo mwazomwe mumakonda kupuma, kapena Zakudyazi zomwe zimagawanika."Kuthamangitsa" Zakudyazi. D.Schmidt Pambuyo pozizira mwachangu kwa mphindi ziwiri, onjezerani nyemba za nyemba kuphatikizapo 1/4 tsp. tsabola wakuda (tsaya tsabola wakuda). Pitirizani "kuponyera" kwa mphindi imodzi yokha, kapena mpaka mankhwalawa atha.
Mukamaliza, Zakudyazi zimatha kuzizira zofewa koma zimathamanga ("al dente") ndi pang'ono. Panthawiyi, mukhoza kuwonjezera msuzi wa nsomba ngati simukupeza mchere wambiri (Nthawi zambiri ndikuwonjezera pafupifupi 1 tbsp).
Dziwani: Musati muwonjezere madzi ena (kupatula nsomba kapena chilimu msuzi) mukamaliza kuthamanga, kapena Zakudyazi zanu zidzakhala "mushy".
