Chimene Mufuna
- 1 ounce / 25 magalamu wouma porcini bowa (pafupifupi 1/2 chikho, wodzaza)
- 1/4 chikho ndi supuni 2 batala (unsalted, kapena supuni 3
- mafuta a mafuta pamodzi ndi 1/4 kapu batala)
- 1/2 tizilombo tating'onoting'onoting'ono (tokoma ndi podulidwa bwino)
- 1 1/2 makapu / 300 magalamu mpunga (tirigu wochepa, mwachitsanzo, Arborio kapena Vialone Nano)
- 1/3 chikho chowotcha vinyo woyera (pang'ono kutentha mu poto pa chitofu)
- 1 makilogalamu / 4 makapu madzi (kuyimba, kapena msuzi wa ng'ombe, kapena woonda
- bouillon )
- 1 chikho / 50 magalamu
- Parmigiano-Reggiano (yatsopano)
- Zosankha: 1/2 chikho / 120 ml. mankhwala olemera
- 1 gulu la parsley (tsamba lakuda, tsamba la minced)
- Mchere wamchere wabwino kuti ulawe
- Tsabola wakuda mwatsopano kuti alawe
Momwe Mungapangire Izo
- Dothi lotentha la porcini bowa mu 1 chikho cha madzi otentha kwa mphindi 15.
- Pakali pano, sungani anyezi mu supuni 2 za mafuta (kapena masupuni atatu a maolivi) pa kutentha pang'ono. Pamene anyezi amatha kuundana, perekani ku mbale pogwiritsira ntchito supuni yowonongeka ndi kusakaniza mpunga mu mafuta (kapena mafuta) mu mphika. Sungani mpunga kwa mphindi zingapo, mpaka utakhala wosakanikirana, oyambitsa nthawi zonse ndi kapu yamatabwa kuti asamamangirire kapena kuyaka.
- Bweretsani anyezi mu mphika, kusunthira mu vinyo, ndipo pitirizani kuyimbira mpaka fungo la mowa litasintha, 1-2 mphindi. Kenaka muyambe kuyambitsa ladle ya madzi (ngati mukugwiritsa ntchito madzi omveka bwino, onjezerani supuni ya tiyi ya 3/4 ya mchere), ndipo pamene ikuwongolera, khulani bowa ndi kukaniza madzi omwe alowetsa mumsonga wabwino, monga izo zingakhoze kukhala ndi mchenga.
- Onjezerani bowa wodulidwayo ndi kupsinjika kwawo kwa mpunga, ndipo pitirizani kuwonjezera madzi kapena msuzi wa ladle panthawi imodzi. Pambuyo pamene mpunga uli dente , titsani kutentha, sungani chikho chotsala cha 1/4 cha mafuta, kapu 1/2 ya tchizi, gramu (ngati mukugwiritsa ntchito), pang'ono tsabola, parsley, ndi mchere wabwino, kulawa. Phimbani ndi kumakhala kwa mphindi ziwiri.
