Zosakaniza
- 6 ma eggplant ang'onoang'ono (pafupifupi mapaundi awiri)
- 1/2 pounds pansi ng'ombe
- 2 cloves wa adyo, minced (ngati adyo ndi vuto, m'malo mwasanamira 2-3)
- 1 sing'anga anyezi, finely akanadulidwa kapena grated
- 1/2 chikho chaswa watsopano wa parsley
- 2 makapu (4-5 sing'anga) ya masamba opaka, amtengo wapatali, odulidwa bwino (kapena amchere kapena amchere opangidwa ndi amchere)

- Chotsani njuchi kuchokera ku firiji, kusungidwa kufikira nthawi yogwiritsira ntchito.

Pogwiritsa ntchito supuni kapena mpeni waing'ono, kapena onse awiri, sungani zitsamba za biringanya. Samalani kuti musadutse pakhungu la biringanya.
Ngati simunachite izi, tenga nthawi yanu. Manyowa adzadulidwa ndi kugwiritsidwa ntchito pakudza, kotero akhoza kutuluka chidutswa panthawi.
- Pogwiritsa ntchito supuni, tulutsa mbewu kuchokera pakati ndikusiya. Yambani pakatikati pa theka la biringanya ndikuyendetsa panja.
- Pogwiritsa ntchito mpeni, chotsani nyembazo ndikuchotsani, kenaka pang'anani mosamala mozungulira pambali, kusiya chotsalira cha zamkati pafupi ndi khungu; Pitirizani kudula kumbali.

Pamene anyezi amachepetsa ndi kutembenukira kutuluka (popanda browning), kuwonjezera pa akanadulidwa biringanya zamkati ndi kusonkhezera kwa 2-3 mphindi. Gwiritsani ntchito ng'ombe yamphongo ndikuyikamo mpaka itayamba kuvunda. Onetsetsani mu tomato, parsley, adyo, pinches a mchere ndi tsabola (kulawa), ndi kuchepetsa kutentha. Kutsekemera kunaphimbidwa kwa mphindi makumi awiri kapena mpaka msuzi umapangidwanso ndipo madzi amadziwika. Chotsani kutentha, ndipo khalani pambali.

Akangoyamba kuphulika (osati bulauni) onjezerani ufa ndi kusonkhezera ndi supuni yamatabwa mpaka mulibe zipsera, Onjezerani mkaka pang'onopang'ono, oyambitsa nthawi zonse ndi whisk, mpaka msuzi uyambe kuuluka - Idzawombera pambuyo pochotsa kutentha). Chotsani kutentha ndikuyambitsa mchere, tsabola, ndi nutmeg. Lolani msuzi kuti azizizira kwa mphindi zingapo musanayambe mu dzira yolk mpaka mutaphatikizana.

- Sakanizani mofulumira kambewu ka biringanya mu mafuta mu chikondwerero chachiwiri. Yambani ndi mafuta pang'ono (supuni 3) koma muli ndi zina zambiri chifukwa biringanya zimatenga mafuta ambiri ndipo poto ikhoza kuyuma. Chotsatirachi ndi kungowonjezera biringanya pang'onopang'ono, choncho pewani mofulumira kumbali zonse, kuchotsa, ndi kukhetsa pamtambo (musati muchotse mafuta).
- Ikani magawo a biringanya pansi pa kuphika kapena poto yophika. Fukani zina za tchizi kuti mutseke pansi pa chitsime pa biringanya, kenaka supuni mu kudzazidwa pamwamba pa zitsulo zammbali.
- Sakani pa supu ya béchamel (pafupifupi supuni imodzi pa chidutswa chilichonse), ndipo ikanipo tomato pamwamba.

Kukonzekera kwina
- Msuzi wochepa kwambiri, pokonzekera tomato, anyezi, ndi biringanya zamkati, gwiritsani ntchito pulogalamu ya zakudya kapena kabati kuti azipanga zidutswa zing'onozing'ono za pulpy. Gwiritsani ntchito zamadzimadzi. Pezani nthawi ya simmer kwa mphindi khumi ndi mphambu khumi ndi zisanu ndi ziwiri (10-15 minutes) chifukwa zimatenga nthawi yochepa kuti msuzi udziwe.
- Mabaibulo ena samapempha chidutswa cha phwetekere pamwamba. Ngati simugwiritsa ntchito, sungani tchizi otsala pamwamba pa béchamel, ndipo muphike mofanana, kwa 1 kapena 1 mphindi ziwiri kapena mpaka béchamel browns ndi eggplant ndi zofewa.
